Ingredients
  

Fresh Vegetables
  • 1 large cucumber, chopped
  • 2 cups tomatoes, diced (any variety such as cherry or Roma)
  • 1 medium red onion, finely chopped
  • ½ cup fresh cilantro, chopped
Dressing
  • 1 juice of lime
  • 3 tablespoons olive oil
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Begin by washing all your fresh produce thoroughly under cold water.
  2. Chop the cucumber, tomato, and red onion into bite-sized pieces and place them in a large mixing bowl.
  3. Finely chop the cilantro and add it to the bowl with the vegetables.
  4. In a small bowl or jar, combine lime juice and olive oil. Whisk or shake until well mixed.
  5. Drizzle the dressing over the chopped vegetables and season with salt and pepper to taste.
  6. Toss all the ingredients gently but thoroughly to combine the flavors. Serve immediately or let it sit for a few minutes to enhance the taste.

Notes

For added protein, consider adding chickpeas, grilled chicken, or shrimp. Customize with feta cheese, olives, or nuts as desired.
